Sioux Falls has packed pork downtown for more than a century, and that is about to change. Smithfield Foods plans to replace its downtown plant with a $1.3 billion facility in Foundation Park, on the city’s northern edge near the junction of I-29 and I-90. Site work was set to start in 2026, with production expected by the end of 2028. The new plant aims to keep more than 3,100 jobs in the city. Building it will bring excavators, cranes and site generators, and running it will bring livestock trailers, reefers and plant equipment.
The city is also a health care headquarters. Sanford Health, one of the largest rural nonprofit health systems in the country, is based in Sioux Falls. Hospitals and clinics on that scale keep generators on standby, and those tanks have to be full when the weather turns.
Cold and wind
On February 15, 2021, Sioux Falls hit -26°F, the coldest reading ever recorded on that date, breaking a record from 1909. Diesel that isn’t winter-treated can gel well above that. Fifteen months later, on May 12, 2022, a derecho crossed eastern South Dakota with gusts up to 78 mph measured just south of the city.
